FLORIDA CUCUMBER AND MANGO SALAD WITH PEANUTS
2 medium Florida cucumbers, peeled, seeded, cut into small pieces
Juice of one large lime
½ cup red onions, finely chopped
½ cup fresh cilantro, finely chopped
½ cup Florida mango, peeled and cubed
¼ tsp kosher salt
2/3 cup Florida peanuts, coarsely chopped
(A French-style mandoline can be used to cut the cucumber and mango into long strings. If one is not available, follow the directions above.)
Mix everything but the peanuts together. Add half the peanuts and mix well. Sprinkle the rest of the peanuts on top of the salad before you serve. This is a great side dish for fish.
FLORIDA CUCUMBER DIP WITH AVOCADO
1 Florida tomato
2 Florida cucumbers
2 cups lite sour cream
1 tablespoon Italian seasoning (or your favorite—any kind will work)
1 Florida avocado, peeled and diced
Peel, seed and dice tomato. Peel, split lengthwise, seed and dice cucumbers. Thoroughly drain all liquid from tomato and cucumbers. Mix all the ingredients and chill before serving. Serve with your favorite chips or fresh Florida vegetables.![]()
